Dinner is often the one meal a day we eat with our families, so let’s call it the second most important meal of the day, after breakfast.  I know it can be a lot to make dinner after working all day, so many of the recipes here will be on the table in 30 minutes or less.  My favorite eat well during the week trick?  Make double of everything.  It’s just as easy to roast 2 chickens, make twice as much beef stew, or a big pot of soup.  You will thank yourself later when dinner’s already done!
